Tasting notes
This medium bodied wine showcases characteristics of a Yarra Valley Cabernet Sauvignon. Aromas of cassis and blackberry are complimented by hints of toasted oak. The palate displays fine textural tannins and a well balanced finish.
viticulture
Hand harvested in March 2017 in the cool of the morning. Ideal ripening conditions of even temperatures and cool nights allowed for excellent flavours to develop.
wine making
Crushed and de-stemmed to open pots. Pumped-over twice daily. Followed by, post-ferment maceration to extract maximum tannin and mouthfeel. Matured in new (30%)and seasoned French hogsheads for 18 months.
