At Hirsch Hill Estate, we believe there are no shortcuts in life, whether it’s breeding champion racehorses or exploring new vineyard practices. Our wines are produced with 100% estate grown and hand harvested fruit, offering a unique taste of the northern end of the Yarra Valley region.

 

 Tasting Notes

 

This medium bodied wine showcases characteristics of a Yarra Valley Cabernet Sauvignon. Aromas of cassis and blackberry are complimented by hints of toasted oak. The palate displays fine textural tannins and a well balanced finish.

 

Viticulture

 

Hand harvested in March 2017 in the cool of the morning. Ideal ripening conditions of even temperatures and cool nights allowed for excellent flavours to develop.

 

 

Winemaking

 

Crushed and de-stemmed to open pots. Pumped-over twice daily. Followed by, post-ferment maceration to extract maximum tannin and mouthfeel. Matured in new (30%)and seasoned French hogsheads for 18 months.
