2019 was a warm and dry vintage on our single block Yarra Valley Vineyard, allowing fruit to fully ripen.
Our Cabernet Sauvignon grapes were hand-picked, then destemmed into open pots fermenters. Inoculated with a selected yeast. Warm fermentation with daily hand plunging until dryness. Matured in French oak on lees for 15 months.
